Family Night EnchiladasNeed an easy go-to dinner recipe the whole family will love? These enchiladas have so much flexibility – Have some leftover meat? Missing an ingredient? Perfect! You can make this recipe your own! I had some left over ground beef and decided to try something a little different, and it couldn’t have gone better. You can try with chicken, pork, or go meatless! You also can vary the taste with the type of salsa you choose. You could end up with something different every time!

Ingredients:

  • 8 8” whole grain tortillas (Kroger brand used)
  • ½ sweet onion, diced
  • ½ red bell pepper
  • 16oz can black beans, drained and rinsed
  • 1 cup frozen corn
  • 3 tsp chili powder
  • 8oz shredded Monterey jack cheese
  • 24oz of your favorite salsa (Jack’s Special Salsa from Kroger used)
  • 8oz (1 cup) ground beef (Foxhollow Farm from Rainbow Blossom)

Directions:

  • Preheat oven to 400
  • Brown meat (if using)
  • Combine meat, onion, bell pepper, beans, corn, chili powder and ½ of cheese
  • Pour 16oz of salsa on the bottom of baking pan. Spread evenly
  • Scoop about 1/3 cup of ingredients into tortilla, roll tightly, and place into pan. Place tortillas side by side into the pan until full
  • Top with 8oz salsa
  • Place in oven uncovered at 400 for 20 minutes
  • Remove from oven, top with remaining cheese and bake for an additional 5-10 min until golden brown
