Chickpea Curry with Basmati Rice

Chickpea Curry with Basmati RiceIngredients

  • 2 cups (uncooked) Basmati Rice, made
  • 1 tbls Olive Oil
  • 1 large onion, diced
  • 1 1/2 tsp Garam Masala (a blended Indian Spice, found at Whole Foods, international isle)
  • 2 15oz cans chickpeas, drained and rinsed
  • 15oz can crushed tomatoes
  • 6oz of Spinach
  • 1/2 cup of plain non-fat Greek Yogurt
  • 1/2 tsp salt
  • 1/4 cup chopped cilantro


  • Prepare rice per bag directions
  • Over medium heat, heat oil and sauté onion for 5 minutes, stir frequently until tender
  • Add garam masala and stir in for 30 seconds
  • Add chickpeas, tomatoes, and spinach, stir until spinach has wilted. Remove from heat
  • Add yogurt and salt, top with cilantro, serve over rice
